A unicorn wine! It's very rare to find a wine that has tremendous character, depth and balance. I visited this property in early 2019. Family-owned and operated, tiny production, eco-friendly methods from start to finish. This is artisanal winemaking to the extreme. Every facet is maintained by the family estate. The entire production of Sauvignon Blanc is sourced from a 12 acre site that is meticulously maintained. Made entirely in stainless steel, cool fermentation temps. The wine is pale is color, super nuanced, great length, but it's not over-ripe or over-blown in any way. Perfect with shellfish (especially oysters), nice with fish (raw, grilled, baked, poached or smoked). It drank very well on day two after being opened, but best to drink it on the day that it's popped. Total production: less than 3000 cases. Drink now through 2012
