Aged for 40 months on the lees. This gives Champagne a run for the money. It's a sophisticated, elegant wine. Fine bead, lively, expressive, with loads of complexity and length. I tried it with sushi, it stood up to a wide array of strong flavors. It's versatile, it would be great on it's own or with all sorts of shellfish. If you have a good stopper, it'll keep for days in the fridge. Total production under 1800 cases. It's not for keeping, fully ready to drink now.
