Champagne like it used to be. I like these people a lot. They are not complacent in any way. Aside from this Champagne house, they also have vineyards in Chablis, along with a distillery. I visited them in March 2019 to taste through their entire range. Their Champagne holdings are in the Cotes des Bar, about a two drive from Reims. This bottling is a 50/50 split of Chardonnay and Pinot Noir. It has a ton of sparkling and that telltale bread dough smell that is so much an indicator of Champagne. It's doesn't have the sweetness that so many of the big commercial brands have today. Think of the style as like Moet et Chandon, but with more character. Drink it as a starter wine or with any seafood. There's enough weight that it can be enjoyed throughout a meal. With a good stopper, it'll keep for days in the fridge.
